cooking creates grease which must be cleaned regularly to avoid
fires and meet health codes.
Professional hood cleaning companies use powerful equipment and chemicals to clean commercial kitchen, hoods and exhaust systems and often they must clean from the roof down. Water used to clean grease must be properly disposed of according to Environmental Protection Agency guidelines. Although some private residences and churches may have commerical grade kitchen facitlities, they rarely cook the volumes of food that require professional cleaning.
